Yesterday I came home from an amazing day with Suzy and the girls at Revolution Wellness I was a speaker and vendor at their Mom’s Market Place.  A fun day of education, demonstration, and pampering for moms!  It was an honor to be involved.

However, it just marked my midweek of events.  It has been crazy I am working full time at school for a month (as the woman I teach with is in Australia visiting family).  It just so happened that I had five events scheduled during this last week when she was also gone.  So, it has been a crazy but fun week.  Only two events to go and I have made it through. Yeah!

Well, the point of sharing all that with you is that last night when I got home I just wanted to relax and have a fun night.  IN my world that means pizza!  Pizza gets such a bad rap!  But it is possible to make it healthier and super healthy actually.  This version is healthier (check the end of the post for my healthiest way to make pizza)!

So, I fried up some grass fed beef, diced up some veggies, made some Bob’s Red Mill GF Pizza Crust (using flax instead of eggs), grated up some goat gouda cheese (for dairy free use Diaya- available at most co-ops) made up a batch of pizza sauce. Then assembled two delicious pizzas:  one deep dish, one thin crust!

Ingredients
  • 1 (32oz) jar of diced tomatoes (the ones from last years garden if possible or store boughten)
  • 1 onion diced
  • 3 cloves crushed garlic
  • Grapeseed oil
  • 1T. dried basil
  • 1 T. dried oregano
  • 1 T. dried thyme
  • 1 tsp. fennel
  • (*optional tomato paste- small can)
Instructions
  1. Heat about 1 T. oil in a pan with diced onion and garlic. When onions are tender (about 3 minutes) add spices. Simmer a few minutes and then add jar/can tomatoes. Simmer for about ⅓ hour or so to thicken. (If you want it thicker add 1 small can of tomato paste)

We also had Kale Salad with a mustard dressing!  This recipe is a must for spring, Kale is one of the first things you will see at this years farmers market!
