In the search for food that everyone can eat I have finally figured out with a little tweaking I came up with a base in which you can add whatever “flavor” you would like. Flavor ideas: blueberry (add fresh or frozen blueberries), chocolate chip (add GF/DF chocolate chips, strawberry rhubarb (add fresh or frozen chopped strawberry and rhubarb), lemon poppyseed (add 2T. lemon zest and 1T. poppy seeds), etc…
The important thing for success is that you allow the flax and water to sit for 10-15 minutes and gel, or else your muffins will fall apart!
Gluten Free, Dairy Free, Egg Free Perfect Muffins Every Time!
Slow dump dry ingredients into wet ingredients. Mix well. I use my mixer on speed 8 for the last minute to dissolve all lumps from flour!
Bake 350 for 20-25 minutes (oven variations, keep an eye on them, when they look "set: in the middle and are golden brown on the edges) remove from oven. Leave in pan to cool for at lease 5 minutes (this cooks the insides and helps it set up, if you remove them to early they will crumble). Remove from pan and cool completely on an wire rack!
Not only can you make these muffins any flavor you desire you can also make them any size. Cooking varies for each size: about 7 minutes for mini, about 20-25 for regular, and about 30-35 for jumbo!
*BULK BAKING & FREEZING: I usually triple these which make 24 regular sized muffins, 24 mini muffins (for lunch boxes and snacking), and 6 jumbo muffins!
This is a fun festive dessert that everyone loves. It is very dense and rich, but oh soooo good. Sweetened with honey and a grain free crust makes it much healthier than the run of the mill pie! Goes great with a cup of dark roast. Just a note a little goes a long way, start with a small piece and then have more if you can!
Grain Free French Silk Pie (with dairy free option)
4 Farm Fresh Organic COLD Eggs or ORGANIC (Do not use conventional store bought eggs for this one)!
1 T. Organic Cocoa Powder
¾ c. Honey (works with ½ c. too- that is how I like it, not soooo sweet)
2 c. or 1 lb Butter Softened (GRASS FED is best, Organic is good, but do not use conventional for this either!) (For Diary Free Use 4 sticks of Earth Balance)
2 tsp. Pure Vanilla
In a mixer whip butter, honey, vanilla, & cocoa. Then add one cold egg, allow it to whip on medium speed for 5 minutes, then add egg #2 (cold) for an additional 5 minutes, then egg #3 (cold) for an additional 5 minutes, then egg # 4 for the last 5 minute. Then scoop filling into almond pie crust or gluten free and chill.
Top this with mini chocolate chips, candy cane bits (you can actually get candy canes with out food coloring or corn syrup at the co-op), etc… Enjoy!

Follow the directions on the package of the Bob’s Red Mill Gluten Free Biscuit Mix, but instead of using butter use coconut oil. ALSO, I use more water than called for, I usually use about a 1/2 c. for a nice moist crust which makes it easier to work with! Add water slowly so it does not get sticky!
STEP THREE: ROLL OUT THE DOUGH
The key to a successful crust is to use parchment paper for your rolling. So, put a piece of parchment paper on your counter, place 1/2 the dough in the shape of a ball on the parchment, put another piece of parchment on top of the ball of dough and press it flat with your hands. THEN, roll it out to fit your pie pan.
STEP FOUR: PUTTING CRUST IN PAN
Peel off the top piece of parchment paper, plop the rolled dough into the bottom of the pie pan and peel the other piece of parchment off the dough. Gently arrange dough in bottom of pan. (this is where a moist crust works well)
STEP FIVE: FILL CRUST
Pour as much of the filling as you would like into your pie. I usually have a little extra. I usually make 2 or more batches and freeze, so fill pie to about the top of pie pan, then repeat step 4 for top crust and pinch crust together – this can be tricky to look “PRETTY” but it tastes good even if it is perfect, especially the first time you try!
‘Tis the season for the tummy bug. It is running rampant. There are many things that you can do to avoid or shorten the time you and your family suffer from this “icky” seasonal bug. Here are a few tips from our family to yours:
*Eat foods that have probiotics in them daily! Here are some of the foods we eat… Fermented sour kraut (COLD- heat distroys the good bacteria that combat the belly bug). You can use home made or BUBBAs is a good brand, you will find it in the refrigerator section at the co-op! Quality Yogurt: The key NO SUGAR! Find a plain or vanilla yogurt you like what is not sweetened, add honey, maple syrup, or fresh fruit to naturally sweetened! Yoplait is an example of a yogurt NOT to eat!!! The brand we eat is PastureLand Greek Yogurt: plain, whole milk, cream on top- it is the BOMB and packed with tons of live active probiotics that combat the belly bugs! Kiefer: The key here is also NO SUGAR! My favorite is goat kiefer there is a plain or berry that is from real fruit. You can find them at your local co-op. You can also make your own see Cultures For Life to learn how.
Kambucha: This is a fermented tea drink that I love! Again try to stay with lowest sugar content, it will not be void of sugar as sugar is what causes a food supply for the good bacteria to reproduce. You can easily make this at home as it is very expensive to buy!
Probiotics: A good quality probiotic is always a good idea especially if your family eats processed foods, which means we really should take one each and every day. Some companies that carry good probiotics are: Metagenics, Pure, or Systemic Formulas (make sure they are therapeutic grade and mix up varieties that you take)
Grippe Homeopathic: Once the belly bug starts to hits we use this on everyone. It drastically reduces the time of illness and allows others to not get infected because it boosts the immune system specifically for the belly bug, thus putting the immune system on alert to attack invaders. Thieves: Overall boosts immune system. We use a roll on each night on our feet to boost our immune system in the winter. If people in our home are not feeling well I do a drop in water 1 to 2 times per day.
Digize: Great if the belly bug hits. It is very soothing and calms down the tummy. Rub 1-2 drops around belly button and 1 drop behind each ear every 20 minutes until tummy calms down. Sometimes, a heating pad over the oils help to sooth quicker. You can also diffuse this.
Peppermint: Diffused or on feet and around bellybutton to easy and calm tummy! I always diffuse a mix of 5 drops of Thieves, 5 drops of Digize and 5 drops of Peppermint and it is really calming to the tummy!
