From the moment they arrive, from the first glace at your new born baby they consume every fiber of your being.  At that very moment your dreams have become reality.  You start to see their destiny unfold before your eyes as you begin to dream of who they are and what they will become.  They are the most precious, the most beautiful, the more pure thing you have ever encountered.  Your heart is so full of love that there are no words to explain.  Your eyes gaze at them endlessly.  Your lips kiss the new born skin with tenderness.  You wrap them in your loving embrace totally and completely enamored with them.

 Sister loveYou leave the hospital heart filled with expectation, excitement, and joy.  All goes well for days, weeks and months and then “suddenly”.  Suddenly something is off, but you don’t know what.  There is a distance that is in their eyes, that once held tight to the gaze of their mama.  What’s happening?  Is my baby ok?  In your core of your being your mama radar knows something has gone wrong.  Something is there that was not there before.  It is so slight and you can’t really put your finger on it.

 

Weeks and months pass and the distance grows greater.  The ability of the precious little one you love more than anything starts to have trouble dealing with daily life.  Things begin to spin and spin, faster and faster until  all of life seems out of control.  Frustration with in your precious one mounts and surfaces in fits of rage.   An hour, then two, then three.  Once a day then, two, then many.  Over and over.  Nothing works, all interventions fail.  You are a mama rocking your trembling child, tears streaming down your face, as you do not know how to help this little one that captivates your being.  You don’t know what to do.

You search the world for answers.  Doctors, books, people….  The trail is a dead end.  You are told, “This is just the way your child is going to be, you will have learn to live with it.”   Your child who you love with all your heart, the perfect treasure you held that first day now stuck in a vortex of pain, anger, fear, and hopelessness.  Everyday single day a struggle, every moment insurmountable pain.  Your mama heart is broken, crushed, you don’t know what to do, and your dreams are shattered.  You are lost and alone with nowhere to turn…

 

And then GOD…

Almongst the pain you cry out to God.  Tears of anguish and torment.  The prayers of this mamas heart for her dear little one are heard!  A shout from heaven touches earth.  Doors unknown, options this  mama did not know existed, start to swing open, and hope begins to spring forth.

 

Hannah 1One by one keys are released showing this mama what will bring healing and restoration to her precious little one.  Food, supplements, adjustments, prayer, biofeedback, kinesiology, on and on it goes, but healing comes…  Dreams once again begin to flood this mamas heart as the lid to barried dreams is flung wide open, no longer fear but her hope and possibility consume her.  Innocence returns, peace is restored, and healing lands complete.

 

A mamas heart restored as she ponders that first day, the day her baby came into this world.  Hearts have been restored, love is growing, anger has ceased.   Passion within her little one blooms.  Loving smiles, cheer filled laughter, fill the eyes that look into hers.  Their eyes meet and they gaze deeply into one anothers soul, the seal of the healing complete.

GF Quasidillas with Dairy Free Option

Here is a great quick recipe that can be lunch, dinner, snack, or appetizer!  It is oh so simple!

You will need gluten free tortillas (I use Enjoy Life are my favorites for Quasidillas as they crisp up nicely- Hannah like the “fiesta” Udis ones best), cheese or refried beans to get them to stick together, coconut oil, diced veggies and/or black beans for filling.

1.  Heat griddle (325 degrees) cover it with coconut oil

2.  Place 1 tortilla on griddle

3.  Put on a layer of cheese or refried beans (for dairy free)

4.  Add fillings:  diced veggies, black beans, etc..

5.  Put top tortilla on

6.  Once it browns up,  flip it.

7.  Cook ’til brown and cheese is melted

In the search for food that everyone can eat I have finally figured out with a little tweaking I came up with a base in which you can add whatever “flavor” you would like.  Flavor ideas: blueberry (add fresh or frozen blueberries), chocolate chip (add GF/DF chocolate chips, strawberry rhubarb (add fresh or frozen chopped strawberry and rhubarb), lemon poppyseed (add 2T. lemon zest and 1T. poppy seeds), etc…

The important thing for success is that you allow the flax and water to sit for 10-15 minutes and gel, or else your muffins will fall apart!

 

Gluten Free, Dairy Free, Egg Free Perfect Muffins Every Time!

  • Dry Ingredients:
  • 1¾ c. Bobs Red Mill Gluten Free All Purpose Flour
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • ½ tsp. Sea Salt
  • Wet Ingredients:
  • ⅔ c. Pure Maple Syrup
  • 1 tsp. GF Vanilla
  • (Mixed and let sit 10-15 minutes: 1 T. ground flax with 3 T. water)
  • 2 Ripe Smashed Bananas
  • ½ c. Grapeseed Oil
  • ½ c. Coconut Milk (or Rice or Almond)
  • ½- 1c Flavor choice (blueberries, chocolate chips, nuts, etc...)
Instructions
  1. In one bowl mix all dry ingredients
  2. In another mix all wet ingredients.
  3. Slow dump dry ingredients into wet ingredients. Mix well. I use my mixer on speed 8 for the last minute to dissolve all lumps from flour!
  4. Bake 350 for 20-25 minutes (oven variations, keep an eye on them, when they look "set: in the middle and are golden brown on the edges) remove from oven. Leave in pan to cool for at lease 5 minutes (this cooks the insides and helps it set up, if you remove them to early they will crumble). Remove from pan and cool completely on an wire rack!

Not only can you make these muffins any flavor you desire you can also make them any size.  Cooking varies for each size:  about 7 minutes for mini, about 20-25 for regular, and about 30-35 for jumbo!

*BULK BAKING & FREEZING:  I usually triple these which make 24 regular sized muffins, 24 mini muffins (for lunch boxes and snacking), and 6 jumbo muffins!

This is a fun festive dessert that everyone loves.  It is very dense and rich, but oh soooo good.  Sweetened with honey and a grain free crust makes it much healthier than the run of the mill pie!  Goes great with a cup of dark roast.  Just a note a little goes a long way, start with a small piece and then have more if you can!

  • 4 Farm Fresh Organic COLD Eggs or ORGANIC (Do not use conventional store bought eggs for this one)!
  • 1 T. Organic Cocoa Powder
  • ¾ c. Honey (works with ½ c. too- that is how I like it, not soooo sweet)
  • 2 c. or 1 lb Butter Softened (GRASS FED is best, Organic is good, but do not use conventional for this either!) (For Diary Free Use 4 sticks of Earth Balance)
  • 2 tsp. Pure Vanilla
Instructions
  1. In a mixer whip butter, honey, vanilla, & cocoa. Then add one cold egg, allow it to whip on medium speed for 5 minutes, then add egg #2 (cold) for an additional 5 minutes, then egg #3 (cold) for an additional 5 minutes, then egg # 4 for the last 5 minute. Then scoop filling into almond pie crust or gluten free and chill.

Top this with mini chocolate chips, candy cane bits (you can actually get candy canes with out food coloring or corn syrup at the co-op), etc…  Enjoy!

This is the best crust for any kind of pie!  Enjoy!

Grain Free Pie Crust

Ingredients
  • 1¾ c. almond flour
  • ¼ c. grass fed butter, cold, cut into pieces or coconut oil
  • 1 T. arrowroot powder
  • ¼ t. baking soda
  • ⅛ t. sea salt
  • 2 T. raw honey
  • ¼ t. pure vanilla extract
Instructions
  1. Preheat oven to 300 degrees.
  2. Place the almond flour, butter pieces, arrowroot powder, baking soda and salt into the bowl of a food processor and pulse 6-8 times.
  3. Then add the honey and vanilla and pulse until it starts to form a dough ball.
  4. Use a rubber spatula to remove the dough and place into an pie pan.
  5. Press the dough evenly into the bottom of the pie pan.
  6. Bake crust for 8-10 minutes, until puffy, but not browned. Allow to cool before filling.
