Valentines Day is almost here, are you ready with some delicious yet healthy alternatives to the sugary things you will be getting bombarded with? Well, I have a few ideas for you! The first is these amazing peppermint paddies. I changed the recipe just a little but the idea comes from a blog called Stupid Easy Paleo (interesting name), I think it should be Super Smart Easy Paleo as this woman is amazing!

- ⅔ c and ½ c. dark chocoalte ( I used TCHO 99% dark chocolate)
- 1 T. raw honey
- 1½ c. shredded coconut
- 2 T. melted coconut oil
- 1½ tsp. organic peppermint extract
- Melt ⅔ c. chocolate in a double broiler. Put one layer in the bottom of each mini muffin pan, put in freezer to solidify. In food processor put honey, coconut, coconut oil, peppermint extract, puree well. Press about ½ tsp of mixture on top of hardened chocolate. Top with ½c. melted chocolate and harden again in freezer. Store frozen or in fridge!
