Recipe of the Week Wednesday: Superfood KALE SALAD!
Kale is one of the “Superfoods” as it is packed full of nutrieints and great things your body needs! Here are just a few of the benefits of kale….
High in iron: which forms hemoglobin (blood) and enzymes, trasports oxygen to the body, cell growth, and proper liver function!
High in Vitamin K: Protects against various cancers, bone health, and prevents blood clots.
Powerful Anxtioxidant: Stuffed full of carotenoids and flavonoids it helps protect you against various cancers!
Anti-Infammatory: One cup of Kale is filled with 10% of RDA of omega-3 fatty acids, yes, fatty acids in a veggie! This helps fight against arthritis, asthma, and autoimmune disorders.
Lowers Cholesterol
High in Vitamin A: Great for eyes, skin and helps prevent lung and oral cancers!
High in Vitamin C: Boosts that immune system, helps metabolism, and hydration

Kale is also SUPER easy to grow, it grows like a weed and bears fruit from spring to late fall/early winter….Here in MN we had Kale into LATE NOVEMBER last year!
Here is a great recipe for kale salad or dippers:
Superfood KALE SALAD! | Print |
- 2 shallots or a small onion
- 3 garlic cloves
- ½ c. organic apple cider vinegar ⅓ c. maple syrup
- 1 tsp. coarse mustard
- 1 tsp. regular mustard
- 1 c. olive oil
- Place all ingredients into a blender. Puree until smooth! Enjoy!
